Mở lò nướng trước 10 phút ở 135 độ C. Vắt lấy nước cốt 2 trái chanh ra chén. Tỏi lột vỏ, băm nhuyễn. Cho 3 muỗng nước cốt chanh, dầu olive, tỏi băm, chút muối và tiêu vào chén rồi khuấy đều lên. Thịt ức gà rửa sạch, để ráo, cho vào tô và rưới nước sốt vừa chuẩn bị lên gà, ướp cho thấm đều hết vào thịt
Sau đó, cho thêm vài miếng chanh, cùng tỏi lột vỏ, bọc lại bằng giấy bạc. Cho thịt gà vào lò nướng tầm 90 phút, sau thời gian này mở nhiệt độ lên 200 độ C, mở bỏ giấy bạc và nướng thêm 20 phút nữa cho đến khi thịt gà vàng nâu, thơm lừng là được. Lấy thịt gà ra để nguội một chút rồi cắt miếng vừa ăn.
